Is it a legitimate concern that uncoated CF parts will fade in the sun? I remember reading how expensive the paint was for the Corvette ZR1 roof.

A good sealer and keeping it waxed, should solve the fading issue. I had CF all over my Evora and none of it ever faded. Put the sealer on once a year and waxed regularly.

SinisterSF is infamous around these parts
Has anyone seen a replacement panel for the center stack control panel faceplate? I attached a pic of the panel I'm talking about.

Ok I'll answer a few questions here and am replying using my cell phone and can't quote all the OP posts, but the mirror covers only fit 2010+ manufactured by Ooya Carbon and fit perfectly - and snapped right on; even the autobody shop couldn't believe how well they fit. Their dash overlay needed slight modification and filing to fit perfectly and I used a rotary tool which worked well.

The hood was manufactured by JSK Racing in China and was slightly more expensive than Ooya but I wanted to see the quality of their products as well. It just shipped today and they sent me post production photos of it and it looks amazing, which I just posted.
