14 way vs. 18 way
I just sat in a 14 way and 18 way seat. 2 questions: 1) when the 18 way wings are fully open, it feels somewhat tighter in the hips and back than the 14 way. Is that the case? 2) the 18 way pushed back further to give more legroom than the 14 way. Is that the case? If this is true, is there a way to get more legroom with the 14 way?

I just traded my 991 C3S for a C4S with *** (18 ways) and PSE. MAN! the 18 way seats are so fantastic. I find them more comfortable and more supportive. The 18s way bolsters definitely protrude forward more, even open they hold you in better and likely feel tighter.

I would be curious if anyone who has the 18 way seats finds them less than comfortable or has any complaints. Then, if so, I'd like to know their waste size...
I mean I'm just saying that there might be a maximum size to which these seats feel comfortable.
I haven't been able to find 18 way seats yet in my casual search for a perfectly-optioned-for-me 911, but have heard they are the cats meow...

I have the 18 way, Adaptive Sports Seats (***), but on a 997GTS and not a 991. The car came with them, and I also had another 997.1 with the ***. I personally would not order them on a car because I never get much benefit from them. I am not fat, but am 6'1" and weigh about 200 lbs. I always have to leave the side and seat bolsters fully open to fit in the seats, and they are still pretty tight. If you are a small person, you will probably get more benefit from them and like them.
The 18 way are great if you are going to do spirited driving (mostly track stuff or you are one of those fortunate to have lots of canyon roads to ramble around in). The side bolster will hold your body firmly so you do not have to brace yourself in the turns with your hands. This leave your hands free to properly put in the steering input needed to negotiate the twisties.
The 14 way seat is adequate for all kinds of driving without feeling that you are pushed together in the seat. Size has something to do with it. Most bigger people do not like the tight bolster and prefer the 14 way. Others, like my wife, who is 5'3" and 100lbs still prefers the 14 way.

I'm a bit overweight with 6ft and 188lbs and I didn't like the 18-way. They push my shoulders forward in a kyphotic-like postural seating position. Love the 14-way though ! Perfect support, even at 8/10 street driving. Envelopes my waist while the shoulders are free. Combined with good seat tilt an distance to wheel nets a comfortable yet sporty seating position.

It's VERY subjective, only way to find out is to try them, and ideally for at least a 10-15 min drive if not more, definitely not just sitting in one at the showroom.
I had the 18 way on my 997.1 C4S and loved them, as well as on my 997 GT2 (though I put the GT3 buckets in for track use), but got the 14 way on the 991 C2S thinking I'd be ok w/ them as I've put on about 15-20 lbs of (fat) weight since I had the 997s and didn't want to feel too tight. The 14-way were ok, but I soooo missed the snugness of the 18-way, so I'm getting the 991TT w/ the 18-way. I'm 6', 220# with a fairly wide frame. The upper bolsters do push your shoulders a little forward, which is optimal for the track, whether you can live with that on the street, only you can say.

I had *** in my 997.2 and they were nowhere near as supportive as the *** in my 991. The 991 seat bolsters seem a lot deeper.
Are the *** in your 991 as tight as the ones you had in your 997?
