I would stick with leather and 14 way seats at a minimum, maybe even look into the 18 way. I have the 14 way and later found that I could get more comfortable with the 18 way seats, but I am over 220 so adjustability is a must.
I don't really understand some of the responses to this thread, so I'll just address myself to the original post.
First off, congrats!
Second, super-extra congrats on ordering a proper manual transmission!
Thirdly, if you're looking to save money at all, I would suggest that the sunroof may be a good place to save that money. I ordered my car without it, and I don't miss it a bit. I don't care for the looks of the glass, they don't open very far and IMHO it looks kind of dorky when open.
I'm not sure about Canada, but it's probably like the USA in that there is a limit to how bright the lights can be. That's regardless of LED or Xenon, so you don't gain much of anything with the LED unless you like that square looking thing.
Otherwise, your build looks good. Now, me personally, I don't care for the Bose system in the 911 so I saved money there too (I didn't think the Burmester was worth the coin) but if you like it, then that's OK. With all of the road noise that these cars make, if I'm traveling on anything other than a perfect road, I can't hear the radio anyway and I just turn it off.
I also skipped the multifunction steering wheel and headcrest but if that's something you like, they are relatively inexpensive.
Now... on the carbon interior. Have you considered also getting the carbon steering wheel? It looks really nice if you've also got the carbon trim and it feels good too.

Thanks for the post and advice. Let me try to explain some of my reasoning.
I will start off by saying that the manual is a must for me. I currently have a DCT, and while it is 10 times faster than I can shift, I find it bland and boring.
On the LED. I do like the daytime driving lights, but I also think that the LED lights do make the car different then many of the other Porsches around.
I'm currently in a convertible, and while I love top down motoring, the climate here does not really warrant it. I end up only driving top down on weekends. I often find myself wishing that my convertible had a sunroof.
As for the looks I think that the black roof will look good with the extra black bits that come standard on the GTS. The black lettering on the rear, the black rear grill etc. Plus I like the extra light that the glass roof will add to the cabin. So I'm pretty set on the rather expensive sunroof. I hope that make sense.
As for the Bose, I want to get the online services, bluetooth which I believe on the GTS is only available with the BOSE package. I have also been advised that the BOSE will help the re-sale value of the car.
I can go either way with any of the steering wheels. On the GTS it is only $160 so I selected it. I like the shape and flat bottom of the standard/multifunction wheel.
I will check out the carbon steering wheel option. I actually only wanted splash of carbon, but that might be cool.
I believe the LED lights will still come in the same color as pictured on the blue GT3. I have not seen a blacked out version of the LED's yet. I think if ordered for the GTS you will get the ones pictured. The online pictures are computer generated and not accurate. This would need to be confirmed from Porsche.
The Bi-Xenon with PDLS which come standard on the GTS are more blacked out and gives it a different look (pictured on the silver 991).
Whatever look is preferred. Just noting the differences.

Yes, the "bezel" is black but the "projectors" are silver.
Vetsky, It looks like a good build. GT silver looks beautiful in person. I would echo some of the same feedback already given. I am on my second 991 and have the full leather 18 way seats which are great but the 14 way seats were just fine too. I would definitely get the 14 way seats over the 4 way seats. I would delete the voice control, it sucks in the whole Porsche line up.
Here is the finial build that I will be ordering. Decided to go with the Turbo wheels in the end. STG had a good idea that if I did not like them I can simply powder coat them to another color. Plus the CL is pretty neat.
Vetsky car looks great and good call on the seats. One last personal opinion that has to do with the steering wheel choice for your build., Multifunction vs Sport Design. I had the multifunction steering wheel on my last 911 and loved the functionality. I sometimes go to scroll with my thumb for the volume or look to end a call on the wheel. I originally was not a big fan of the Sport Design wheel but after having it in this Turbo I think its much more attractive. I also like the paddle shifters over the buttons, although the buttons worked just fine. Neither the buttons nor Paddles are of concern on your manual. Purely on aesthetics I would pick the Sport Design wheel. I wish the Macan steering wheel were an option on these 911's for the best of both worlds, good looks and functionality.
I believe Doc had the multifunction wheel on their last 991. Maybe some other members will weigh in.
Hello and thanks for the comment. While I'm sure some people want a pure track car, this will be my daily driver and I NEED the comfort options.
If I track it once a year that will be a lot.

I get it, but it is a sports car not Benz. Some of the extra features you listed I don't think you will miss and some aren't worth the extra money;i.e. Bose system. Your car, build it as you please no matter what I am sure you will enjoy it.
One last comment, I love the CLs but they have their challenges, you may want to read up on them.
