Subtle hesitation at highway speeds. Any idea?

So here's the issue. While maintaining steady throttle at around 70mph I occasionally noticed a little hesitation in the engine, a minor stutter followed by a resumption of speed. I noticed this too with the cruise control on, but not as often. Its almost as if I let off the gas pedal ever so slightly. Around town and city driving I do not notice it, but thats probably because the throttle is all over the place. Any ideas?

I just had the car in for major service (figured I would start ownership off right) and as part of it, had all the fluids, sparks and DVs changed. It was doing this before the service too, but thought the service would take care of it.

Could it be as simple as a clogged fuel filter or something like that? I appreciate any insight. Car has 50k on it and is an x50 if that matters. Thanks in advance for your help.

Probably around 3k RPMs 5th Gear. Coil packs were not replaced with plugs. Was that a big no-no on my part? Expensive fix? Here I thought I was being proactive by changing the Flueids, Dvs and F hose. Sigh....

Might be the variocam kicking in and out. Kinda feels like a hesitation, but not... Usually does it around 3k rpm.
