Most importantly, make sure you get a quality car ... X-50 or not. Pick the color combo you want. They are more difficult to correct than performance upgrades or maintenance issues.
If you decide to go the performance upgrade route, it may benefit you to pay a little more for a car that is already modified to your taste.
Lots of cars are available, you'll probably pass on a few that you'll regret. That's part of the process. Enjoy it.

I will be taking the car to live with me in Germany in the fall and the yellow will just stand out too much there especially with the Polizei!

I only answer the questions put to me by an insurer. If a VIN came stock with a certain package, then it is up to the insurer to understand what my loss might be... if they don't ask they are not told...

I read somewhere that these cars are built in Germany(this may be a rumor
), that being said, you will be able to find one there for a great price.
i also wanted to buy an x-50 but couldnt find one.. you cant let that be your ultimatum, you need to find the cleanest car even if its older by age the condition of the car is key

If I could do it all over again I would wait until I found an X50, the brakes and K24s are where you want to be. Your turbo upgrade is going to be 1/2 the price then starting with a K16.... and your going to keep the car very close to stock, can use K24 header and the car will be reliable and make big power.
I think if you run K24 turbos with all supporting mods and a good tune car is still stock and you will be able to run with some quality cars.
Brakes, if you can find a set of big yellow ceramic brakes... hold out for those!!! Very important and expensive upgrade many people look over when adding power.

Do you know which insurance company? Was it Geico? I have Geico, and I think they list mine as a GT2 as well. Mine is not even a X50.
I just bought a MY2001 non-X50 and I suggest buying based on condition and budget. You can't be too picky when buying used cars. If you want white with the X50 package, be prepared to pay a premium. I had no preference to color and options, so I ended up finding a very clean, but high mileage (60K miles) Turbo for under $40K (just a little more than most non-Turbos). My goal was to just get in a Turbo that has not been raced out or had body damage. If I need more power, I will flash the ECU for roughly $1500 and that will yield me much more than 30HP that the X50 gives me. Good luck with your search.
