FWIW I think it is possible to drop an engine on jack stands

It is absolutely possible. A two post lift just makes life much easier.

When considering a floor lift, see what specifications are required for the concrete thickness underneath the lift posts. You may have to saw cut section to put in deeper concrete pads (and more steel) to support the lift. Also be aware you should never core, cut or drill into a post tension slab floor (very common on newer homes).

Just built a new garage with radiant heat in the floor. I called Greg Smith before I did my Pex tubing and my pour, and they said a 4" floor is all you need for any of their lifts. Thicker is better, but 4" is adequate.

I have 3 four post Revolution lifts in the 1000 sq ft section of my garage. The lifts have been generally reliable, but I had trouble with one lift not locking in the highest position. If possible, I would go with the larger size to allow you to walk around the lift without banging your head.

My concrete slab is 6" thick and the ceilings are 11 feet high. You will also need a high track garage door.

I can fit 8 cars in this section of the garage.

Rotary is the lift I would get. I looked into it extensively a while back, and that seemed to be best one for the money.

It seems to be one of very few options for normal ceiling heights.

I have a MaxJax and live in Dallas... so you can check it out if your nearby... your profile says your in Texas.... Anyhow, I love the MaxJax! I would have gone with a tradition full size two post lift if I had the proper ceiling height but my garage is standard height... Here are some pics with the garage door open and closed... the pics are not at full height... I actually just wanted to test it out by leaving the car on it for days to check safety.....

+1 for the Maxjax.
I have had mine for several months and it is great!
It is the best mechanical component I have purchased (other than the 996TT).
The max height underneath is about 52" if you use the spacers so you need a very short mechanics seat. I have two and use both depending on what I am doing.
One is the adjustable Traxion 2-700 ProGear Mobile Gear Seat (120 on amazon).
The other other may go down as the world's shortest seat and is called the Whiteside Professional Low Profile Detailing Seat (DTS2) (136 on amazon). It is great and I can roll under the car with my back straight up.
