PSS10 vs Stock
I used to have pss9 on my e46 M3 and it was wonderful street suspension.
But it is way too soft for track use.
I believe the PSS10 provide better handling and if it is just as good (if not better) as pss9, I think they will be great on your car, and probably a lot better than stock suspension (in fact, most upgrade are better than stock setup, lol)

For street and occasional track work, (not chasing milliseconds) night/day. Just do it.
Similar. Comparable coilovers. One over the other - preference only.
My OEM ROW -suspension went to the bin on thursday and PSS10 went in. Much firmer ride, sharper turning, without sacrifying ride comfort. I lowered 1cm from ROW ride height. From carage floor to front and rear wheel arch center the ride height is now 65 cm. I have damping setting front 6 and rear 4. I will set front to 7.
I will have to have aligment re-checked, after suspension job car started to pull slightly to the right when releasing steering wheel. I hear it is common when lowered with these cars especially when there is camber on the road.

I had stock to begin with and switched to PSS10s when I added power. I only lowered my car by about 1/2". Two things I noticed the most... roads that felt bumpy before don't feel bumpy no more. Quick lanes change at high speed feels much more planted/stable.

Which is your choice for PSS10 damping settings rear/front?
I used to do 5/6 and changed to 7/8 for the last 12 months since I have been doing a lot of twisty roads. 7/8 is still comfortable... no complains from wifey.

Not sure why you do the front higher than the rear; most shops that I know do rear higher due to the understeer of our cars.

Please keep in mind that you should drive your car for a couple of weeks and let the coilovers settled before going to the alignment shop. Enjoy!
Original struts with spring tops need to be reused.
