That sucks. I did a DV claim on my 9 year old at the time Range Rover after the other party was found to be 100% at fault. You need to find someone who can do the appraisal for you as stated above, make sure they specialize in DV claims. The guy I used only cost me $250. Submit his report to the other drivers insurance company and see what they come back with. It wont be enough to make up for every lost penny but better than nothing. If you don't like their offer just go to small claims court against them. Patience is key. Good luck.
