Does anybody know what's a good seat option to replace tired stock seats? I'm looking for savannah beige in a sportier track type seat

In that specific color you're going to need to be very lucky to find a good used set, or you're going to have to buy a set of aftermarket seats and then pay to have them upholstered in the proper color/leather. Which may cost a ton too....

 

I've seen the GT3 seats in various colors come up for sale. They have risen in value considerably. Sellers seem to know what they have and get top dollar. Worn black leather ones trade for $5,000. I'd bet for those Savannah ones you are looking at $8,000 minimum.

Make sure you test sit some of these bucket seats. The GT3 seats and the like are very restrictive, not for everybody.

 

Why not just get a pair of sport seats and have them done over.

997 seats are a great upgrade, much more comfortable.

I believe Corbeau will make a set of the GT seats for around 2.5k. So still a reputable brand but without the porsche tax.

There's a carbon set of GT seats for 2.5k on ebay UK in black/alcantara, there's also an add for someone making them in metropole blue plus a genuine set that look in decent condition for 5k gbp. People asking for 10-12k (gbp) are in dreamland.
