My car has leather seats & leather around the door, but i wanted to make my interior a plush leather interior with stitching like you see on lambo & ferrari for example, then found out removing that dash is a 10 hr job & can end up with rattles.
Yes, take it to a pro, as mentioned get a referal from the dealer. I have full leather in mine and would not attempt any repair myself. Now as to the rattle issue, I can attest with 100% certainty if you change it out you will get a rattle, it just happens.
vinyl and leather are often repaired with filler, sanding and spray dye. color matching is a little hit & miss and texture is often a problem once the dye and filler is applied. you will know it's still there if you look for it. but anyone other than you won't. it's a 90% repair. go for a mobile upholstry repair shop. a physical shop will do the same job for more. they just outsource the work.
It really depends on what the material is that the scratch is in. If leather you may be able to easily do it. It's almost impossible to completely erase a scratch but the idea is to break it up so it's not readily visible. I just refinished my 13 year old steering wheel and hand brake lever. It was pretty easy and came out like new.

I used the Leather World system and it worked great. Clean, fill, paint/dye (over and over) then seal (over and over). Looks like new. No before photos but it was showing discoloration on the top half of the wheel and the top of the brake lever.
I used their interior touch up kit - don't know the specific kit name. The contained products will be the same depending on what size kit you get. Mine had large bottles of cleaner, leather touch up and sealer along with foam sponges and an abrasive pad.
No holes. I don't do holes in my cars.
