Restoring Hard Seatbacks

I have a 2004 911 Turbo Cabriolet with hardback seats.
Since I have a full leather interior I think the hardbacks are wrapped in leather, but the leather is in really bad shape.
Does anyone know how I can restore them back to new condition?
I either want to restore the leather, Or if there is a way to remove it and then paint the hardbacks car body color, I would do that.
And if anyone knows any shops in Long Island/New York/Newy Jersey that do this please let me know who they are.
