Beige Interior
Grey, i have an opinion but it's a biased one. I own an ocean blue with savanna beige full leather interior, it is a great color combo for that car. I bought the car from a good friend, i didn't have many choices. At first blush i thought the interior was a bit "yellowy", but have you ever seen the famed beige interiors of the finest Italian road cars? Quite the same, it has an "exotic" appeal or look to it, definately not the stealth or hard look of black leather. If i had my choice, I would always own black leather, then beige, then the greys (greys just aren't my favorite, that's just my opinion). I will say that the beige isn't to be underestimated, but it does not possess the "racy" look of black.

I have a Lapis blue with beige interior, when i bought it i loved it. After a week, i hated it. As a result i filled the interior with as much dark burl wood i could find to tone down the yellow. But it sure shows off the contrast.
I've never understood why Porsche didn't offer a decent version of Beige - it's much too yellow, but I agree it's the interior to go for if you're thinking about wooden interior pieces - the combo looks great, especially in a cab with the roof down.

I have Savannah with small light wood package and shifter e-brake. It offsets the beige well. Savannah works very well in hot climates and wears well. My car is two years old and still looks brand new. All Savannah would be too drab. Either wood or carbon fiber livens the look nicely.
Grey, for what it's worth, you could offset the interior with black mats instead of the matching tan ones. i did that in my car (ocean blue/savanna full/metropol blue mats) and i think it looks good.
When I first test drove my car I had the same exact thought - too yellow. I've had the car about six months now and I can honestly say that I don't even notice it much any more. I always receive compliments about the combination and it kind of grows on you.
Besides you'll be concentrating so much on the road ahead you'll hardly notice.
