Custom dyno tune? Would it be beneficial?
I should also add Durametric is really straightforward to use for datalogging. The older beta 6 version used to have a bug that would prevent datalogging of more than two parameters simultaneously but that has been resolved. ScanXL is also good but it is not so intuitive and doesn't come with instructions. You just have to figure it out.
EVOMS writes their own files and has a dyno. Todd at Protomotive writes his own files and has a dyno. Switzer writes his own files and has a dyno. FVD writes their own files.
Softronic does write their own files and allows others to use their flasher tool to load files. I might be leaving someone out like APR, GIAC... But those are the main ones.
Save the CUSTOM dyno tune for when you have a fuel system, big turbos, and really need it. Everyone has already dialed their ECU files for the stock 997 Turbo with basic mods.

Yes, G.I.A.C. writes all their own files, but what separates them is that they write the files with software tools that they themselves made. This is what gives them the ability to incorporate things like the Flashloader where you can switch between 5 unique maps.

Garrett Lim, Chief Programmer for G.I.A.C., is not limited to an off the shelf generic tuning tool that only allows access to just some maps. He can view and access everything.
Now you mentioned a small group of guys in your initial list. I am not taking anything away from them as it is no easy task tuning even with someone else's tool, but what makes Garrett part of an even smaller group is because he is writing code in the same fashion as those at Bosch and Siemens. Again, this is because he is not relying on anyone else. Everything from the inital decoding of the encryption, modification, then re-encrypting so nobody can steal their handywork is all done by G.I.A.C. in house.
Here is an example of how writing code from scratch can be useful. A local client of G.I.A.C. contracted Garrett to get his Porsche 959 to pass a sniffer test in California. Those cars did not come with emissions equipment to pass in the U.S. So Garrett started from scratch and wrote all new engine programming for the 959 where Oxygen Sensors were incorporated into the loop and it would self adjust air/fuel to meet U.S. Emissions standards.
At first Bruce Canepa was given credit in Excellence Magazine for being the first with his conversions, but after G.I.A.C. contacted Excellence and gave them the proof they were the first, a retraction was printed in the next issue.
No small task. This took Garrett MONTHS to due, but the finished product exceeded everyone's expectations.
Impressed? If you are not, you should be. This is thousands upon thousands of lines of hex code that had to be deciphered and rewritten.
Just a little history lesson...
As for actual tuning, we are doing exactly what you had mentioned. Our specialty is not software, its hardware. Our R&D staff will develop products and dyno tune on our Mustang AWD Dyno. This is the same dyno that GIAC has as well. We will then Datalog using a variety of tools and custom made sensors. We can paint a very accurate picture of how the car is running and they can tune for us accordingly.
What also gives us an advantage is that we have access to 93, but G.I.A.C. can only get 91. Now that might not seem like an advantage, but it is. Since they do the tuning, and they have the same dyno, we can send whatever product we are testing to a local G.I.A.C. client in California. They can then tune for 91 making sure that no matter where we sell our products they will work on any and all gas grades.
The guys at G.I.A.C. are pretty humble. You will hardly see them on the boards boasting. They let their work speak for themselves.
We were their very first dealer back when Garrett was living on the East Coast going to Med School in the 90's. We are their largest dealer and have no intention on ever switching.
They always come through for us and continue to improve themselves to stay on the cutting edge of technology.

They don't sell it as they don't want to create any competition for the nice folks at Durametric or companies doing similar things. It's a respect thing...
GIAC was definitely one of the first on a mass market scale to tune Porsche cars. We all respect GIAC for that. Competition is what grows business to have a better product. Being first does not mean you are the best or deserve anything. The most important aspect going back to the OP is, choose someone your comfortable with.

Years ago we had that mentality, but we've matured. We let our engineering prowess, data collection skills, and full disclosure speak for itself.
The way you get more power from race gas is by being able to increase the ignition timing. The race gas does not detonate as fast as pump gas, so more timing can be run for more power. Boost does not need to increase either.
So what GIAC does is have a unique race gas ONLY map with far more timing for more power.
What other way can the car be tuned so as to timing is increased to take advantage of fuel?
Rease I ask is because it's the opposite of how the car is from the factory. When the car detects knock from lower octane gas, it will pull timing so it does not detonate.
I need an education.
