Thanks for the the feedback, The Sport Chrono is def out, Most of you guys know I have owned several P cars including the original Techart TT that was 700HP. I am not going to notice any difference with or without it. PCCB is awesome but not worth the $ IMO on the 997S. As far as bling option its all personal taste. Regarding the deviating stitching you have to get full leather to get it everywhere which I am not going to do. I always enjoy a nicely done interior.
Leather door finishers is a waste. You need to change the shifter to get the dev stitching on it as well...which may mean you will want to change the rear center console to painted or leather.
SC does provide a graphic display of lap times while at the track. I get a kick out of watching how my lap times improve at the end of a school. I may forget to signal a lap now and again.
The guys I know that thought SC would be a good option changed their opinions once they had it on the track. They thought Sport map would be a good thing in a 10/10ths arena, but they quickly found it to be too jumpy and not linear, making for worse transitions than stock map - so it never was used again. I don't think the OEM throttle map is very good myself, but the REVO map is fantastic.
As for my setup, Damptronics (lowered about 20mm), GT3 Cup control arms, GT3 sways with TRG drop links.
The accuracy of SC for timing is pretty poor, especially at high rates of speed. As I understand it you would have to set it all up, and hit the button every lap at the same point? On the track, I'd consider that dangerous in the upper run groups where you need to focus 100% on the critical functions. My TraqMate is automatic GPS based and very accurate - I turn it on in the grid and it does the rest. Lap times is only one minor part of data acquisition and analysis.
I was very sarcastic in my original reply on purpose - giving the "other side of the story" because marketing tries to pawn SC off as a Sport / Performance option, where it is neither. It's a neat toy, but the throttle map might make you think it's faster, but it isn't and in fact the map is not as good as stock on the track.

Totally wrong... Run a search and learn what the Sport Chrono does (which is pretty much nothing). When you have PASM, you press that button to tighten the suspension - there is no difference between SC Sport and PASM Sport. SC slightly modifies the throttle position - so to get 50% throttle you press the gas pedal say 1mm less when in Sport. The car is no faster, no more powerful, etc. It can trick you to thinking it does though - because if you are driving along and say "Hey, watch what happens when I press this Sport button" and you tap it and that advances the throttle - just the same as if you pressed the gas 1mm. It does modify PSM slightly, but PSM never comes into play anyway on the track so what's the point? I hear it's useful if you have power memory seats and / or care about changing how long lights stay on in your car when you leave (or something like that)...
I'm a track junkie and did not want SC at all - instead I spent the same money and got REVO software, which really does make a difference (better throttle map, better optimization for the fuel I use, etc.).

1. it's a lot more than 1mm... I would say even more than 1cm
2. it doesn't advance the throttle when you push it, try it or read the manual since you don't have SC!
3. what does SC have to do with power memory seats? and with the interior lights? maybe I'm missing something here
I would bet a lot of money on you not having SC on your car!
Seems a bit odd to go with all those options and not full leather, for the extra 2-3k get the full leather and skip on door finishers and some other little items. It will have better trade in and value when its time to move on.

Agree with the full leather instead of the minor trim doodads. And the smell of a full leather car is heavenly.
don't get offended but I think a car with so much red inside will look awful... but that's my taste... at least check it before you buy it... and YES, take full leather, no questions about that... how will you ever sell a 911 for premium price without leather seats?
