I've got H&R springs and really like them. With the sport button on its VERY STIFF. Car does handle like its on rails. I've yet to track the car but can't complain. Much better than the stock suspension.
I think the Bilstein's are excellent price/performance. You can't go wrong. I've also heard great things about the Moton's, but they are very top shelf - in performance and price. I would suggest, despite the fact that you're not going to be pushing it too hard, that you replace the sway bars 'while you have the patient open'. I would recommend the GMG (I believe they have a 997 fitment) over the H&R's that I purchased. Only because the GMG's have more adjustments.
But enjoy the new ride and the mods. I tend to string them out and savor each change. But to each his own...

I wouldn't mix and match stock shocks designed for stock spring rates and ride height, just asking for trouble. You don't appear to be afraid to spend the money, so get the right product, coil overs.
Personally, I'd get the JIC. I had them on one of my Porsches and they are amazingly well made and perform extremely well. The reason I'd go JIC over PSS is that the JIC is built to the next level. You absolutely do not have to get the competition springs with the JIC, you have a wide selection of spring rates and the dampers (shocks) are 15 way adjustable. So you can have the ride be like stock if that's what you want. But, if you end up addicted to the track, you will now have a very worthy suspension that you can swap springs and crank up the dampers.
If you feel you will never venture to the track, then the PSS is probably just fine. I've heard of many people that start with PSS and once they progress at the track, end up changing them for something like JIC.
