Will this size tire fit on stock wheels and will the handling or ride change?

Fits stocks fine. I think tire rack lists them as an option for the stockers. Works fine on mine. No change in ride. Slight change in handling, but I went with stickier tires at the same time.

No problem on an S with classic 19" wheels (from my own personal experience), even if you have it lowered with H&R springs. Since you will now have a wider track in the rear, you may wish to put some 5mm spacers on the front, to even it out a little bit.

Would a 325 25 19 work well on the 19" carrera sport wheels?

No. The stock wheel is an inch too narrow for a 325.

mine came stock with 305's, becuase i optioned the sport wheels which are 11.5 rather the 11.. will 315's fit on this?

It will make it understeer even more. For that reason alone I wouldn't do it.

M 06 with the Porsche Classic Sport wheels came stock with 305 Michelins on the rear. Handles great on the track and street.
