Install air filters, MAF sensors and start engine to see what appens

 

I finally figured it out, since I was running with no airboxes I had the pipes that hold the MAFs installed backwards and it took me forever to notice. So once I installed those pipes correctly and had the MAFs facing in the right direction so it could read the airflow correctly, it fired right up. I'm really surprised that this car doesn't run in some type of open-loop, baseline mode with the MAFs unplugged. That's one of the things that originally led me to write off the MAFs being the issue. Lesson learned.
