I'm on the configurator online playing w/ options and see no "Packages" for the GTS, is this normal? Is everything typically a la carte on the GTS models?

Have you considered using the porsche configurator to built a 911 GTS. That might give you a hint

 

Hmmm... The Panamera GTS has no packages, neither does the 911, I guess I will assume the Cayenne won't either... Looking forward to some more detailed into on it though, I can't figure out if it has the raise/lower adjustable air suspension or it's air suspension that stays at one level. Among other things.

 

My dealer said no packages for the Cayenne GTS in 2013. Can't say about prior years. Sounds like ala carte.

 

that will drive up the price pretty quickly vs. the standard S.

 

Yeah, really makes you stop and think about what you "need" lol, it fast approaches that 6 figure price point.
