Advice - pasm on or off?
PASM is not self-adjusting while in Sport mode. While in Normal mode the suspension WILL self-adjust towards Sport mode. I believe Porsche designed this as a safety feature as well as a selling point; or as some would say: gimmick. Jake above has some very good points as to over-lap. So, Normal mode while at full boogie will self-adjust towards Sport, however, will not achieve full on Sport mode without selecting the sport button.
And, some people don't want the computer to select the mode for them, i.e. I drive on the street almost routinely in Sport mode as I like the dynamic better.

Perhaps this chart of PASM damping rates will make it clearer. This chart is one I had for the Cayman and as I said before, I'm not absolutely sure if the GT3 is similar. In any case, you can see that there is a range of damping forces that are possible at any given damper speed, depending on the what the PASM computer decides. The difference between "sport" and "normal" is the range of damping forces available. The striped area is the range of overlap between the two modes. The stiffer end of the normal mode overlaps with the sport mode, but the top end of sport mode is clearly stiffer.
