I am deciding between black and espresso. My current 3 cars have either black or gray leather so I am kind of leaning towards trying something new. However, I am not sure if espresso matches white or blue.
As for the other options:

Carerra Classic wheels
Sports Seat Plus

SPASM

Sports Chrono

Sports Design Steering wheel

I very much like your options list. SPASM + PSE is going to be awesome and the sports design wheel option is a no brainer when you have PDK.
The main options on my car are pretty much a subset of what you have:

14-way adjustable sports seats
Electric folding exterior mirrors
Power steering plus

No need to regret, I examined white with espresso full leather today. Definately not earthshaking compare to black.

Espresso matches white better than it matches blue imho.

@dochusar,@White991,@Remus325 - Looking at the beautiful pictures of your white 911s has pretty much won me over to the white camp. I think white really shows the lines of the rear of the new car well and helps differentiate it from earlier models.

Very nice! I agree Espresso goes better with White. With blue, it is probably too dark. I can't order this year. My in laws are coming to help take care of the baby for a few months and so the 911 has to arrive AFTER they leave (hehehe). So a couple more months of agonizing over options!

Ordering the 991 was the easy part. It's the color combo that's killing me. Just for exterior, I was yoyo-ing between white and black. Good luck with the in- laws
