coolant temp drops at WOT
from my experience they all do it... 30L of coolant needing warmed up....it's not ideal but it happens, try to get the whole system up to temp before doing a big pull, even a small/light pull when the engine is up to temp to help warm the front end of cooling system warm a bit to reduce the variation
Never hurts to do P.M. on the car, worth a shot to see if it helps the situation a bit and have peace of mind

....i'm joking...I think you are right , i'll try with new thermostat and i will see how it works next winter .. nothing matter with this summer weather , so i can enjoy the car .
Temps should slowly climb to center (maybe slightly to rt of center) and stay there. (manual states temp can go almost to red, but that's not what we're addressing here).
The thermostat opens once the temp hits that center mark, I believe it's what 180 or 195 on these cars. It should then stay steady and not move around at all. In cooler weather, if you're driving and temps drop while on the highway it means the t-stat is stuck partially open allowing coolant to the rads in front and thus cooling the car. It should be circulating the motor only until temp and then released throughout the system. I had a similar issue and these t-stats seem to fail partially open, maybe as a safety?? who knows.
I also had a brand new OEM one fail as installed, a defect from Porsche. Since then, I test in a pot of water on the stove prior to install. For the cheap price, I would change it just to get it done. At least it's one less maintenance item to address.

yup they will do exactly that, but when the front half of the cooling system (anything post thermostat/engine) is cold and the engine 'asks' for large change in heat transfer(thermostat fully opening when engine goes full load) the heat mass swap is huge... it happens typically only once per drive if not given an extended warm up cycle... talking ambient temps near freezing.., loose observation says ambients of 10-15+C or so won't see this issue
