Need a Tuners Help/Advice

Sorry in advance for the long post. I picked up an '07 tip car out of Texas in Nov '21. The pre purchase inspector gave it a pretty clean bill of health, but mentioned it "may" have a tune in it because it "felt" faster than stock. I had nothing to compare it to because this was my first P-car. Had it shipped to Utah and spent most of the winter just cleaning things up and "making it mine". Then Spring came around and it was time to start having fun with the new toy. Under hard acceleration at times, it did feel like the car was misfiring randomly or I was getting throttle closures or something. It just didn't feel smooth. I thought maybe it was just used to that nice 93oct in Texas and was gonna take some driving to get used to crappy 91. Also watched the "boost gauge" and thought that what I was seeing was stock numbers and concluded that it was probably still a stock tune. Through research I later found out that's a "calculated" value and has to relevance to actual boost. So my next "test" was to take my Dragy out and do some 1/4 mile pulls to get some sort of data, a baseline if you will, since I was getting ready to put some sort of tune in it. I was quite disappointed. Consistent, but slow. Everywhere I looked, these cars should be somewhere in the 117-118 mph trap speed even at a little bit of altitude. My car was 113-114. Surely there couldn't already be a tune in the car if it was running slower than even a stock car? So I went ahead and purchased an OTS stage 1 and stage 2 tune (as I'm planning for an exhaust in the future as well). The company I went with, said just as an FYI, there was already basically a stage 1 tune in the car. Oh really?! Ok, well, I went ahead and installed their stage 1 hoping it might be a better fit for my car given the data I had collected thus far. The car seemed to run basically the same, and was the same if not a little slower in 1/4 mile testing. So now what? Without a way to log things, I was in the dark. So I picked up a Durametric to get some hard data. This is where I need some guidance. Also forgot to mention that with the "tune package" I purchased, there was supposed to be a stock oem porsche tune file I could load up for diagnostic purposes etc. That is what is loaded onto the car now. I've personally tuned a few Toyota engines (mr2,supra) and some N54 BMW's so I'm not totally in the dark. Honestly wish I knew how to do this car but I'm still new to it. Anyhow, I did a 3rd gear pull in normal mode with an 80* oat and this is what I got (attached link to my datazap graph).

My first thought, this is def not a stock map. Boosting over 21psi in normal mode is not "normal" haha. Second thought, I def need some better intercoolers. A 25c rise in just one pull is too much. Final and most concerning thought, This car looks to be pulling timing all over the place. The ign angle line is more jagged than the rocky mountains. If I saw this on one of my bmw plots, I'd be pulling at least 5-10* across the entire timing map until that smoothed out, then add some back in till I only saw an occasional degree pulled here and there. I should mention this is also with some Torco octane boost in the tank that should have brought it up to around 94-95 oct. This to me could explain why the car is so slow as well. I haven't had time to check the health of my plugs so this could be part of it as well. Thoughts? Advice? Appreciate your time and expertise in advance!

I may do that thanks. I have emailed Markski a while back about his exhaust and he was quick to respond and answered all my questions. I honestly should have just spent a little more and went with him for the tune in the first place.
