I just took a set of Rossos off my GT3 and put on PS2's. What a difference. I have had potenzas on other cars and the Rossos are better. I have yet to try the Yoko's. I am so happy with the PS2's, I will likely not try anythine else for a while.
I have Bridgestone Potenza SO-3 on my ride just now. I just replaced the rears on Friday but only becuase the fronts are the same. I liked the Mich Pilot Sports when I had them on the M3. . . .

i have also only been through pirellis and michelin on the 997 and michelin win by far,
much more comfortable, stickier, less noise and much better wear.
if they were considerably cheaper I would try the bridgestone or continental but would never go with the pirellis.

As far as your question about where to go to install them, I would say although pricy, go to the dealer, besides for trusty service, incase a problem arises to your car, such as the steering wheel vibrating, bumpyness from the tires ,, etc. (**** somewhat involved with the wheels or tires), they will most likely charge some type of an inspection fee if you had your tires installed somewhere else, and then blame it on the outside laborforce usually.

I started with Bridgestones S02s, went to Michelin PS2s, now using MPSC of those I like the MPSC the best by far...I would like to try the Yokos though...with my new OZ rims...but I want the Neovas...

I have Michelin Pilot Sport tires on one set of rims and Michelin Sport Cup tires on another set I use at the track. The Cup tires have significantly more traction than the Pilot tires, but they are also noticeably rougher on the road, I assume because the sidewall is much stiffer. When the Cup tires get warmed up, they get super sticky and pick up all kinds of stuff from the road surface. My vote is with the Pilot tires for the road because the Cup tires are too tweaky for daily use.
