It easy, just buy a removal tool from here:

Raise your spoiler up and look at the round metal stand for the hooking holes.lock the tool on and keep tuning until the spoiler come put from the screw.Do the same when you fit the new spoiler back.

Spoiler is more difficult to remove than 996TT, and the mechanism is different. The tool, however, will work.
You need to elevate the spoiler with the manual button, then insert something to prop up the spoiler a little higher...Porsche uses an inflatable rubber balloon to force the spoiler a few millimeters higher beyond its extension point. Insert the spanner into the hole and rotate it around until the holes match on the inside and the outside.
On the 996TT, the spoiler uses a locking mechanism. On the 997TT, it is a screw mechanism...with the spanner in place, I believe clockwise turn of the handle will loosen the bolt/screw...the hydraulic cylinder is the male component, the spoiler is the female component.
Do the same for both sides, and the spoiler will come off.

Yes. Two choices...both are a PITA.
1. You could re-bleed the hydraulics. By doing so, you can added additional pentosin when you suck it into the system, and then lock the bolt at a higher height. Doing so is a PITA because it involves bleeding the system. At most, you may get 3-4 more mm of height.
2. Change hydraulic cylinder to the set used for the 997TT cabriolet. The extension height is higher on the cab...but you are altering the aerodynamics for the coupe. Also a PITA because you need to attach the new hydraulics by removing the old and again, rebleeding the system when you attach the new ones.
Best option...do what I did. Get decklid and wing from Ruf and call it a day...lol

The service manual tells you to set the deployment height to 34.5mm if I remember correctly...the extra play is used to adjust the left and right spoiler to the same height by bleeding each side. You could possibly suck in more hydraulic oil and not bleed each side (thereby allowing a higher height) but bleeding the system takes patience and probably requires two people.
If you do a search on the 996TT forum, there are instructions for the procedure. The wing is mounted a little differently...rather than a screw, there is a bayonet style lock that needs to be untwisted.
Dealer changed out my hydraulic pumps for the spoiler as one side was leaking, rather than rebuild the unit they replaced the whole system. When they removed the spoiler they used a special wrench and lifted the spoiler with a rubber inner tube. You need the rubber inner tube to get the spoiler high enough, to get the wrench enough remove to turn it. It is very tight and you have to be careful or your paint could get damaged.

It is made by Hazet, runs about $80. It is a 9X12 insert to a standard Hazet extension bar.
The spoiler can be manually elevated without the rubber inflation device...just pull the spoiler upward, and stuff a bunch of pillows to hold it up.
