Unhappy Bluetooth pairing issues - 2007 V8 Vantage

I've read all the other threads on this, but none of them have helped. When push the 'talk' button on the steering wheel, and then say 'pair phone' the car will just keep repeating 'pairing phone' forever without making a connection. Even though my phone (Pixel 5) is in Bluetooth pairing mode, the car never shows up as a possible connection. I believe Bluetooth versions are designed to be backwards compatible, so I'm expecting this will work with a 14 year old car. Anything I'm missing here? Again, the car never appears on my phone - the two just seem to talk past each other without ever connecting.
