Well what kind of driving experience are you looking for...tight road racing courses, DD, highway runs and etc....

Both would be superb choices but I'd go with the GT3RS for track days.

If GT2 was priced at the GT3RS market value, GT2 -- it's the better car road or track.

Depends which tracks...I would probably take the RS and do the seats, exhaust, and rollbar.

For track events the GT3RS is a better car. Obvious less power but for most with average to above average driving skills you'll get more enjoyment from the RS. You can drive it closer to its limit than a turbo. You have to be damn good to get the same limits from a turbo without trashing the car.

That's like asking blonde or brunette. Very difficult choice. Sure would like to have that problem though.

Depends on your skill at the track. The RS is going to be a little more forgiving since you don't have to deal with the car coming on boost or an additional 130 HP through the rear wheels. Corning limits should be very close for the two cars so there won't be much difference in entrance and exit speeds. The main differentiator will probably be straight speed before getting on the brakes.
