I am going to be shedding weight off my car and wanted to see what your guys' gutted cars looked like.

A buddy has a 996 GT3 Speed Yellow without any interior. He had a full cage and track seats put in. He has a little bit of the dash left, and the rest looks like a raw painted shell. I think the total weight savings after a full cage was about 200lbs.
A stripped 997GT3 looks like a Lotus Exige 
Picked one up this week, very serious fun can be had in that car, can't wait till next year when the tracks are warm again.
It's hard to shed weight and retain everyday drive-ability. If you are looking for more power you may have better, cheaper, and easier gains by going with lighter wheels, and lighter rotors (if you arent using ceramics).
If you are looking to decrease weight for turns you wont gain much and you'll be doing irreparable work, stripping out carpeting/soundproofing, which will make it a killer to resell.
There's always the urge to be faster than the next guy, I'd say just focus on driving. A GT3RS is already a seriously fun track car, if you goto far down this road what you really want is a race car, not a track car. Just keep working with what you got, it'll make you a better driver.
When you stop racing others on the track, and realize you are your biggest competition you'll make leaps and bounds in your driving.

Raiyu... I was in a Lotus Exige last week (on Track) and I have to say it was the best fun I had in a long time... you could thrown the car around like a rag doll, it was so so forgiving. Great little car!

Do a search for posts made by "grussel" he stripped a 997 RS and converted it to a cup car with more power, wider wheels, and a bunch of other cool stuff. He had it up for sale a few months ago.
