Go Pro HD, i think its around $299. Its great video quality and audio; although there are many settings that I have not yet fined tuned. They have two enclosures, one meant for all around use and another for underwater/over 100mph.

http://www.youtube.com/watch?v=YBI7v6ebEzY

This was taken in 720p, but the camera can shoot in 1080. The files tend to get a little large and hard to edit. I also had on the full enclosure on the camera so the sound seems a little muffled. I havent tried the open case at speed yet so i cant tell you how the wind noise would be.

I think the main competitor is the chase cam which can integrate car data (speed, tach, etc.).

I didnt have a roll bar at the time, but that is usually the ideal spot if you want to see yourself in action.

+1 on the Go Pro. I have the SD version. I recommend the wide angle version. I use the suction cup mount that comes with the camera and mount it to the inside of the windshield.

here's a link to a good cam mount. they have others on the site, but think this might be your best bet. What I use, never moved!

If you track your car, NASA and many other DE organizers have not allowed me to suction cup the camera to the dash or window even though I have a professional style mount (could almost hang yourself off of it). The Go Pro has double sided tape that is practically cement and will harm the paint, so careful if you go that route.

I used a thin layer of masking tape as a buffer between the 3m double sided tape and the paint and worked fine.

Another vote for the HD Go Pro. Lots of mounting hardware and they just came out with a software upgrade last week which adds a couple of nice features.

I been using the ContourHD (1080P wide angle) and love the image quality. I initially used the big suction cup mount but recently bought a fixed mount for the harness bar which provides a very stable image and better angle IMO.

I have a Chasecam for inside the car and just got a Go-Pro HD for outside the car...

Both work well, my wife tried out the Go-Pro in her boxster at an event a few weeks ago...video quality was great. I bought the motorsports version and then picked up the $8 go-pro tripod adapter to mount it on the BK boxster roll bar mount she already has.

Here is some in car video from the Chasecam...2nd one is integrated with my traqmate:

This key fob video camera actually takes pretty good track vids and at $6.99 the price is right. Flash memory not included so you will need a mem card.

Here is a recent track vid with a keyfob cam, taped to the top of a 944Spec race car. Not bad for 6 bucks:

I have used many IO Port Racing mounts that attach to cages/roll bars, you just mount any camera to that. I just sold my last one though to jump on the GoPro wagon though, they offer impressive results.

Check out the RCA EZ2000... It's only $75 at NewEgg, can do up to 720p, works great, and is beautifully simple.

Just insert a microSD card and go shoot your video. There's a little wobble in my video because I just mounted it with rubber bands around the passenger headrest, but that's easily fixable and it's a minor issue anyway. Like most, wind noise is an issue, but there are ways to deal with that. The only thing it lacks, IMO, is a tripod mounting point, but at least it's small and easy to strap to something in the car.

I bought 5 of those before Nationals... 1 of them actually worked long enough to use, but it does work well and still isn't a bad deal for a total of like $35 invested (plus microSD card).
