Guys and gals (Suzy), I know you guys are the experts all matters related to Porsche, even more so than my dealer.
I have 2 questions regarding the subject above.
1. I, like many others find the Carrera Red a bit too red. Is it possible to replicate the exact same Black/Red 2 tone interior with red stitching found on the TTS via the Z options?
2. With the Carrera Red interior, is the interior of the roof red or black?

I'll answer you questions the other way around

2. With a carrera red interior comes a black alcantara roof, A-, B-, and C-pilars.
1. Yes it is possible, but be very, very carefull how it is ordered, because it is extremely complicated to do it right. 99 of 100 times you'll end up with a black dash and red plastic parts in it, or something like that. The big mistake almost everybody makes is going for a red interior and add black parts. Always take a black interior as the base and add carrera red parts!
Just be sure you have a salesman that knows what he is doing or get the help from Porsche Exclusive in North America. I went to the factory in Zuffenhausen to get it done right. In the end, I decided not to go for the black-Carrera Red, but I still think it's the most beautiful two-tone interior...
A more simple way to get the effect is to go for a black interior with only the seats (front and rear) in Carrera Red. Looks pretty nice and is a lot less complicated.
Here's an example I made:
To make it stand out a little more, you can add Carrera Red deviated stitching to the black parts.

Wow Suzy, that's really nice. My wife is always talking about red interior, but I can't stand too much of it. You seem to have found the perfect mix though! I'll keep this in mind for our next car !

I think I know what you mean by the black dash with red parts in it because there was another forum member (forgot the link) with that exact same description.
Actually 1 thing that sprung to mind was if it's easier to just pick 2 tone interior (Black/Platinum Grey), and changing all the Platinum Grey parts to Carrera Red. This way its harder to muck up. But I think this would cost heaps more maybe?
Does the dealer have a visualizer for the z options => a more advanced configurator? Finally changing the colour of the seats is a Z option?

Thank you so much for your illustrations Suzy! You bring up an interesting point about choosing the black base first before applying Carrera Red to it. From the red/black TTS interior photo, it actually doesn't seem that difficult, as you need to apply the black to everything above the carbon part, as well as to 1/2 of the centre console. Talk is easy I suppose...

In the factory they make the interior exactly like it is ordered. They don't think, they just just do, even if it may appear a bit odd. There's no one that thinks "is this right or should we maybe contact the customer before we go on with it?".
You really have to know where all the parts are and what color they have.
IMO it would be easy... Just ask for the exact same interior as the TTS, but it doesn't seem to work that way... (I even think that a complete interior of a TTS will fit in a Carrera, so they just have to install it)
The black base is the safest way. If you end up forgetting something to order in red, it will never look odd.
The part I don't like about it, is that you pay an awful lot of money, for something that is standard on a different variant of the same car. On the other hand, it does look very good of course. If I had gone for the original plan of Rhodium silver exterior, I think I would have also gone for the Black-Red interior. It's an amazing looking combination, although I would like it even more if the red was a bit darker.
The dealer has a more advanced configurator, but no visualizer for LTS. That's why a lot of salesman are not very happy to order LTS. They know that a lot can go wrong. Just to be sure, my salesman gave me the advice to go to Porsche Exclusive in Zuffenhausen myself (I'm lucky that it isn't that far for me) and even made the appointment for me. He's selling Porsches for more than 25 years and still was not 100% sure he would get it right and didn't want to end up with an unhappy me

Everything that is not a standard option, is a Porsche Exclusive option or Z-option as you call it.

I play around with different configurations all the time, just for fun. I make screenshots of the fullscreen 3D configurator and layer different colors in photoshop. After that I just erase the parts that I want to have in the underlaying color. It's pretty easy to do with a pentablet.It's a nice way for me to learn Photoshop, since I more and more use it on a professional base too for renderings.
