Colin, for understeer, you have it backwards. Your way will give you more understeer.
I'm pretty sure if Colin inflates the front tires more (up to a point), he should be reducing understeer.

Inflating a tire more (to a certain point) gives it more grip. So inflating the front would give more grip in the front and thus less understeer right?

Depends on your starting point I guess, but the stock pressures are too high, so from stock pressures as a starting point, you lose traction by adding air. (this is from my personal experience)

Scott, I track at least once a month and up to 4 times a month and not necessarily at the same track so shipping is not an option (yes, I am a little addicted)

I'm probably going to drive there on them or get a little trailer made to hitch to my car to just carry wheels.

"Increasing" the tire pressure upfront (relative to the back) will decrease the slip angle, which will make the car seem "looser".

Oversteer can also be induced by increasing the rear slip angle or by reducing rear tire pressure a bit. I can avoid over inflating/deflating either by doing a bit to both front and rear.

I can start with a cold pressure a few degrees below the stock pressures so I don't end up in the extreme zones.

This is the oldest trick in the book without resorting to expensive suspension mods.
