I want a more balanced power/torque curve
Right now my engine is bone stock with the exception of an EPL tune. I feel like there is a lot of lag from idle until 3,500rpm, then there is a huge mountain of torque for a thousand or two revs then power tapers off until redline. I don't want 6 or 700hp I just want something less peaky. I also want to keep my stock exhaust, I don't want any more drone. I would maaaaybe do a Europipe. Any suggestions?

Well, our turbos don't like stock exhausts due to the back pressure they create. Many of the top quality exhaust systems out there (Markski, europipe etc.) do not have drone especially with cats in place if that's your thing.
I suggest you get the following:
1. Exhaust
2. Simple Drop In Air-Filter (BMC)
3. Diverter Valves
4. Re-Tune
This alone will completely wake your car up and give you ALOT more torque at low rpms and the right exhaust will greatly reduce your lag.

I have an EPL tune myself, but I have an exhaust as well, and I like the torque delivery of my car. Sure it tapers off a bit at high revs, but it's very very strong at low revs because it spools very quickly.
I thing you are missing the quick spool due to the exhaust.

No its not an X50. How do you like your Europipe? I think I will have to go that route eventually.
I do like the idea of a GT3 but I don't know if I would be able to give up the comfort and "normalness" of the Turbo

I love the Stage 2 Europipe quiet. No drone with the back seats up (little drone with then down or out) and the 100 cell cats really help with spool. A clean air filter also helps with spool. My car will hit full boost at around 3k rpms (sooner in the higher gears) and begin to build at 2k rpms
I recommend that you get a Durametric and log some data. That way you can see quantitatively what you are describing, and compare with other tunes/mods before spending lots of money, to be sure that you get what you are looking for.
The graph below shows the output from my car, taken from fourth gear pulls from 2000 to 6500 rpm. If the torque curve is linear in the early stages, like these, the acceleration feels very smooth. I find the car easier to drive on track since my upgrades, which added about 80hp.

Unfortunately, turbo charged cars by definition all have lag until such time that they're spooled. So from idle (stoplight) not brake boosting just sitting there to hold on here comes warp drive there is going to be a delay from the time you drop the hammer until the car comes up on boost and really responds. There are things you can do to minimize it but it really doesn't matter what kind of unobtainium, flux capacitor turbo someone wants to sell you it's still going to be there. I think you're more of a na guy by the sounds of it.
I agree with the exhaust suggestions. A k16 car especially with a tune should be very responsive. My first setup was only a tune and it pulled early and did fade up top. The exhaust helped the up top and the earlier spool. The 16/24 turbos and a different tune really changed the car. My car makes boost early on (starts around 2500 or so and pulls all the way to redline in any gear). I also have the upgraded wastegate springs that help. I don't think many recommend these upgraded wastegate springs on stock k16s though. Good luck.
Nothing will give you that NA feel. Before I sold my 996 NA, I had both the NA and TT for a few weeks. Even the little 3.4 gave instant response. Around the town, it was more fun. The GT3 would only be that much better. That may be your car.
What I did- buy a quick NA daily driver for the week and tt for the weekend. I opted for a v8 coupe.
DD- When just going around town and don't have the space or need for higher speeds, the DD will be more fun.
996tt- Slow in the neighborhood, slow to the grocery, but give her a little space to scream and she will give you the time of your life. For weekend driving, the 996tt is unbeatable.
The mods will help your car open up, but doubtful they will make much difference in the throttle. I have 3" wide open exhaust, cone intake, BOVs, enlarged y pipe, lighter wheels / tires, ECU Tune, ect ect ect and the car still takes off like an old Cadillac until the boost hits- then HOLD ON.
