KW Varient 1 or H&R Coilovers for S5
I had KW V'3 for a long time in my B5. I would go with the V3's over the V1's. There are many more ajustments available on the V3's then the V1's. You can get real sporty or firm depending on how who want the car to handle and the cost isn't too much more.
I just put H&R's on my B7 but haven't had enough time in the car to give you an opinion yet. I have no complaints about my past KW experiences.

Im not going to get the V3's just because I don't feel like even bothering with it. I know some people are biased towards certain brands, the question is which would have a smoother ride or sportier ride. The cost is exactly the same.

to me there is no reason to get the adjustable coilovers. 99 percent of all of you will never track the car. I think basic coilovers like the H&R and KW Varient 1 are sufficient because they offer a better ride then just changing the springs. The look is the most important thing for me, not if I take the car to the track once in my lifetime.

and they ride great and I never have to think about them. The V3's on my STi is a different story.
